Although it is salty, too much shio causes a slight burn to the palate. Since the seasoning in the broth is so important, it is best to limit the use of shio. If you must add it, add just a little at a time so that the flavors are not lost.

Ramen should also have sesame oil. In addition to being salty, sesame oil also imparts a light flavor. If you desire to have a thicker taste in your noodles, mix in a tablespoon or two of sesame seeds with the ramen before cooking.
