A cupcake is a small, sweet baked good topped with frosting. Cupcakes are made by mixing cake batter and pouring it into the paper-lined indentations of a cupcake or muffin pan. They are popular as a single serving dessert, and are available in many different flavors. The word “cupcake” is also used as a term for a small cake in general, even when it is not frosted. In Britain and Australia, a similar dessert is known as a fairy cake.

The most common cupcake ingredients are flour, sugar, milk or water, baking powder, butter or oil, eggs and flavorings. These ingredients combine to create the basic structure of the cake, as well as provide aeration, moisture, tenderness and flavor.

Most recipes call for the ingredients to be beat together at least 1 minute using a hand mixer or stand mixer, a process called creaming. This is to create little pockets of air in the mixture, which helps make the cakes light and fluffy. It is important to not overbeat the mixture, or the cakes will turn out dense and heavy.

After beating the butter and sugar, most cupcake recipes then call for the addition of eggs. The eggs help to bind the mixture together and provide additional aeration, moistness, tenderness and flavor. It is important to add the eggs one at a time, and to mix thoroughly after each addition. This prevents the eggs from curdling the batter and makes a lighter and more fluffy cake.

Once all of the wet ingredients are mixed well, most recipes then call for the addition of dry ingredients. This is often done in stages, as overmixing can cause the cupcakes to become heavy and dense. It is also recommended to use a mixing bowl ($11, Crate & Barrel) with a spout to easily add the wet and dry ingredients.

Before adding the dry ingredients, it is helpful to break the eggs into a separate bowl or custard cup first. This will ensure that any shell fragments are not added to the batter and can be quickly fished out if needed. Then, the dry ingredients can be slowly added to the egg mixture while continuing to beat.

Most cupcake recipes then call for the addition of the wet ingredients, such as milk or water, butter or oil, and vanilla extract. It is recommended to mix the batter for another 2 to 3 minutes. This helps to aerate and fluffify the batter, as well as to help the cake rise. It is also important to scrape down the sides of the bowl frequently. It is important to note that the temperature of the oven plays a major role in cupcake cooking time and consistency, as high temperatures can result in overcooked edges and a dense interior. Low temperatures, however, can lead to undercooked edges and a drier cake.
